Lasagna Soup


It has been awhile, mostly because I have been trying to focus more on me and getting healthy. So hopefully to follow will be great recipes that have a more healthy twist; lower calories, lower fat...

Here is a great recipe for just that. It's a soup that is filling enough to have for dinner.

Brown;
1 lb Italian ground turkey
2 c chopped onions
1 c diced carrots
2 c mushrooms, optional
2 T garlic, minced

Brown meat and season with salt and pepper. Then add onions and carrots, saute for 3 min. Stir in garlic and mushrooms and cook another 3 min.

Add;
4 c chicken broth
1 can chopped Italian style stewed tomatoes (14 1/2 oz)
1 c chopped zucchini
1 c mafalda pasta
2 c fresh chopped spinach
1 T dried basil or 4t fresh

Add broth, zucchini and tomatoes to meat/ veggie mix. Bring to a boil. Stir in pasta and simmer for 6-7 min or according to package. Add the spinach and basil and cook an additional minute.

To serve, place cubes of mozzarella cheese in the bottom of a bowl. Ladle soup into each bowl over cheese and garnish with parmesan cheese.
